Pros and cons of gas stoves

Pros: There are many reasons why professional chefs choose gas. The gas flame provides instant heat and can be more finely controlled. Gas cooks food faster and more evenly too. It’s also a moist heat so baking and roasting food in a gas oven is said to produce tastier, juicier and more flavourful results.

From a safety standpoint, the flame is visual so that you know your gas stove is on (unlike a black electric coil that is still hot but doesn’t look it). Gas is also more affordable than electricity so your operating costs may be 10 to 30 per cent less.

Cons: A gas stove is generally more expensive to buy than an electric stove. Installing a gas stove is also more expensive since gas lines have to be created if they’re not already available. 

When turning on a gas stove, if the ignitor doesn’t light the flame, then gas is released into the air which is a safety issue. And cooking with gas can take getting used to since it heats up fast. Plus, with an open flame there are risks of a fire if oven mitts or tea towels are accidentally dropped on the burner.

Pros and cons of electric stoves

Pros: Electric stoves are inexpensive to buy and easy to hook up if you have the electrical outlet already installed. If you have a spill, it’s easy to unplug the heating coil and wipe the dish clean. Likewise, if a burner isn’t working, you can buy one and install it yourself easily. Food cooks slowly so you have good control, and the coil or glass surface is generally very stable for pots and pans. 

Cons: Operating costs are higher for electric stoves due to electricity costs. As for cooking, electric stoves produce a dry heat so food, either cooked on top or in the oven, may also taste a bit drier. If you have an electric stove with a glass top, the glass can scratch or crack.

For both gas and electric stove options, repair costs are generally the same. Parts such as an igniter, knob, dial, door, gasket or thermostat are similar.
